We are delighted to be able to offer our guests the opportunity to experience delicious, authentic ayurvedic cuisine during their stay.

The ayurvedic dishes served at Black Mountain Retreat Center are specifically prepared to support the requirements of groups focusing intensively on meditation and/or hatha yoga. They are easily digestible, and lead to a sense of clarity, lightness and focus.

All meals are prepared from fresh, mostly organic and where possible local and seasonal ingredients in accordance with the instructions of Vedic monk and Sanskrit adept His Holiness Vidyadhishananda Giri. Meals are gluten-free, vegetarian and exclude eggs, onion and garlic. Some milk and yoghurt can be taken. The only fats used are pure organic coconut oil and organic ghee. A typical day’s meals might look like this:

BREAKFAST — fresh fruit or yoghurt; cooked grain for those requiring more substance. Chai served separately before or after breakfast.

LUNCH — lentil dhal with butternut squash; rice with black sesame seeds; steamed rainbow chard; salad with baby arugula, baby spinach, lettuce, basil. Date for dessert.

DINNER — yellow split pea soup with red kabucha squash; steamed or fried laccinato kale; teff (the protein-rich ‘runner’s grain’ originating from Ethiopia, now grown in the U.S.)

There is a $14-18 per person, per day surcharge for this option. For someone staying in the Manzanita Rooms that would bring their daily charge to $68-72 per day, representing excellent value for three organic meals per day together with accommodations.

For more information on the specifics of this cuisine option, please ask to speak with one of our catering staff. Note that we need 1-2 months’ notice to be able to provide this option, due to the specialized ingredients that we source.

While not affiliated to his organization, we respectfully and gratefully acknowledge the guidance of His Holiness (swamahiman.org) in creating this delicious menu-plan within the context of the Vedic lineage.
